Welcome to this episode of Behind the Greens. There is much that goes into the perfect sliced apple and Crunch Pac knows the tools of the trade. Committed to providing the highest quality organic and conventional sliced apples in the market, Crunch Pak annually creates more than 1 billion apple slices at plants in Cashmere, Washington, and Pennsylvania.<hr class="legacyRuler"><hr class="invisible minimal-padding"><hr class="invisible minimal-padding">In Crunch Pak’s Cashmere facility, raw apples are received and placed in refrigerated storage. Bins are then brought to an outside tank where they are submerged and washed. Whole apples are elevated into the Inside Dump Tank where they are floated in the flume system to be spray washed. Apples then move from the flumes to the slicers where they are rotated, cored, the seed pocket is removed, and they are each cut into 12 slices.<hr class="legacyRuler"><hr class="invisible minimal-padding"><hr class="invisible minimal-padding">Less quality cuts are separated and slices tumble across the farmco spray machine for cleaning. Fine particles and sluff are removed by the rollers and slices move to the sorting table for visual inspection. Good slices are treated with Crunch Pak’s Anti-Browning Solution and slices are then sprayed with Calcium Ascorbate. <hr class="legacyRuler"><hr class="invisible minimal-padding"><hr class="invisible minimal-padding">Next, slices are elevated with an incline conveyer as they are de – watered by Airknives. Slices move to the packaging machine where they weigh slices to appropriate packaging size, bag and seal sliced apples. The final product is evaluated by a visual inspection for grading. After a trip through a metal detector the products move via conveyor to the packaging room. Where they are packed into cases, palletized, stored and cooled. Final products are shipped one day after their production date to ensure internal temperature reaches 33-38°. Ever wonder what goes into a Crunch Pak apple slice? How about perfection.
