Bob Murphy, V.P. Marketing &amp; Sales, tells AndNowUKnow, “In 2006, we harvested 16-growing rooms, producing 70,000-lbs per weeks. As of November 2013 we harvested 64-growing rooms producing 280,000-lbs of mushrooms per week. Our core customers/business partners have consistently pulled more volume as we increase production.” </p><hr class="legacyRuler"><hr class="invisible minimal-padding"><p>Premier's state of the art mushroom growing operation is designed for consistent production levels &amp; quality. The company’s composting processes &amp; growing processes are done in environmentally controlled rooms. Extreme cold &amp; heat does throw mushrooms a curve, but Premier stays on top of preventative controls &amp; measures to offset the extreme weather conditions, especially this time of year.</p><hr class="legacyRuler"><hr class="invisible minimal-padding"><p>The cold winter months &amp; winter holidays are the strongest demand time for both retailers and foodservice. Major factors for this are the increased demand for mushrooms &amp; the produce varieties available during this time of year. </p><hr class="legacyRuler"><hr class="invisible minimal-padding"><p>Bob notes, “As a company our production/supply is up from last year, but the demand is higher than our new production levels. As an industry the mushroom demand is up this year over last, with the largest increase in crimini demand. Mushrooms have become a power item in both retail &amp; foodservice arenas.”</p><hr class="legacyRuler"><hr class="invisible minimal-padding"><p>Mushrooms have become the 12th highest volume category in the produce department, Bob tells us, and as a small but growing-local company Premier greatly appreciates the support for the locally grown &amp; California grown programs.
