<p>Demand is spiking for California lettuce as the backlash of unfavorable weather conditions reverberates across many growing regions of the nation.<hr class="legacyRuler"><hr class="legacyRuler"><hr class="invisible minimal-padding"><hr class="invisible minimal-padding">Heat in the Ohio Valley, New Jersey, and the southeast and rains in Eastern Canada have hit lettuce producers hard and have left retailers scrambling to stock their shelves with lettuce, which is consumed more heavily during the summer.<hr class="legacyRuler"><hr class="legacyRuler"><hr class="invisible minimal-padding"><hr class="invisible minimal-padding">They’re looking to California to fill the substantial void and are pushing prices high for the state’s lettuce.
