ISSAQUAH, WA - Costco has gone plant-based for the latest addition to its covetable, and affordable, food court menu, and it looks yummy enough to have me researching membership plans. After a successful trial last year, the retailer is bringing the Al Pastor Salad to menus across its fleet of stores, letting customers bite into plant protein marinated in al pastor-style seasoning, chopped romaine, black beans, and fresh and banh mi vegetables for just $4.99.
According to a report from AOL, this is just the second salad offering to grace Costco’s food court menu—the first being a Caesar Salad—and the first salad that is fully-vegetarian. An enticing option for either vegetarians or those looking to up their consumption of fresh produce in lieu of meat, this new salad is just one further step into a more plant-based menu for Costco.
Earlier this year, Costco also announced its first-ever vegan menu item, an Açaí Bowl.
As reported by AOL, the bowl is made of açaí and baobab, and is topped with granola, strawberry slices, and blueberries. Also going for $4.99 a pop, the retailer has positioned itself as an affordable provider of vegan offerings, as many similarly-sized açaí bowls elsewhere can cost upwards of $10.
Is Costco signing on to the plant-based revolution? For my stomach's and wallet’s sakes, I sure hope so.
