Who has the hottest potato? It’s a tough question. So tough, that it took a contest at a prestigious university to find the answer. The Idaho Potato Commission recently hosted a competition in association with Harvard’s twenty foodservice providers to find the most innovative use of the American staple for gourmet cooking. The winner was chef Paula Gaughan for her Asiago soufflé crimson potatoes. Don Odiorne, Vice President Foodservice of the IPC, stated, “We were extremely impressed with the high level of creativity showcased by this passionate group of foodservice operators.”<hr class="legacyRuler"><hr class="invisible minimal-padding"><hr class="invisible minimal-padding">
