Limoneira Gets Ten Lemons a Leapin'

This season, Limoneira is focusing on options for some lemony dishes to lighten your holiday table. Check out the recipe below for a fun salad sure to be the perfect centerpiece for consumers tables and have them sprinting for the citrus this December.

Christmas Wreath Citrus Salad

Christmas Wreath Citrus SaladLet this festive salad wreath your holiday table and lighten the load of carbs and meat by introducing the freshness of the meyer lemon.

Salad Ingredients:

  • 5 ounces of salad greens (spring mix, arugula or sweet baby lettuce mix)
  • 2 Limoneira Meyer lemons, peeled and segmented
  • 2 Limoneira navel oranges, peeled and segmented
  • 3/4 cup pistachios (shelled, roasted, and salted)
    3/4 cup pomegranate seeds
  • 1/4 cup hemp seeds

Dressing Ingredients:

  • 4 tablespoons fresh-squeezed Meyer lemon juice
  • 1 tablespoon honey
  • 3 teaspoons champagne vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon dijon mustard
  • Pinch sea salt & black pepper

Directions: Whisk together lemon juice, honey, champagne vinegar, olive oil, dijon mustard, salt, and pepper until the salt has dissolved and the dressing is emulsified.

Christmas Wreath Citrus SaladPlace greens on a large serving platter and arrange oranges, Meyer lemons, pistachios, pomegranate, and hemp seeds over the greens in a circular pattern—like a Holiday wreath! Leaf a spot in the center to add a small dish for the salad dressing. Dress salad just before serving and enjoy!
