<p> Earthbound Farm Co-Founder Myra Goodman and her daughter Marea Goodman have been long-time fans of vegan cooking, going so far as to create their own vegan cookbook together - <I>Straight From The Earth: Irresistible Vegan Recipes For Everyone</i>. Neither Myra or Marea is vegan, but that’s what makes this cookbook so unique. We ended up including nutritional information on all the recipes to show how that just isn't true!<hr class="legacyRuler"><hr class="legacyRuler"><hr class="invisible minimal-padding"><B>Has eating vegan changed how you feel, health-wise?</b><hr class="legacyRuler"><hr class="legacyRuler"><hr class="invisible minimal-padding"><I>Myra</i>: Neither Marea nor I are vegans, but I did eat strictly vegan for a while last summer to see what it felt like and to be more educated on the subject. While I was eating vegan, I felt energized and happy, and was eating healthier than ever before. When you don’t let a piece a meat be the center of your meal, you need to embrace a wide variety of beans, grains, nuts, seeds, and fresh produce, and the result is that the nutrient and fiber content of your food soars. Before I ate vegan, I believed I needed the animal protein to get full and feel well. Now I know that's not true!<hr class="legacyRuler"><hr class="legacyRuler"><hr class="invisible minimal-padding"><I>Marea</i>: When I eat vegan, my body feels very clean, clear, and energized. I don't eat a vegan diet consistently--I appreciate a wide variety of foods in my diet--but I can always tell when my body needs me to focus more on eating plant-based foods.<hr class="legacyRuler"><hr class="legacyRuler"><hr class="invisible minimal-padding"><B>Let's face it: Working with fresh produce, particularly fresh vegetables, takes time, what with washing, trimming, and cutting up vegetables before you even start cooking them. What would you tell busy parents, who are stressed with work and their kids' school/sports schedules, to convince them to cook and eat vegan food, if only occasionally?</b><hr class="legacyRuler"><hr class="legacyRuler"><hr class="invisible minimal-padding"><I>Myra</i>: It is often very hard to juggle everything in our busy lives. I think it's important to be kind to ourselves and not despair if we're not eating healthy all the time. But at the same time, I believe it's essential to make healthy eating a top priority. Feeding kids healthy food will help their performance in school and sports, and teach them good habits for a lifetime.<hr class="legacyRuler"><hr class="legacyRuler"><hr class="invisible minimal-padding">When we look at the all the illnesses associated with the typical American diet that depends on fast food and processed foods--obesity, diabetes, cancer, and heart disease to name a few--we realize how important it is to embrace cooking from scratch and eating more whole, plant-based foods.<hr class="legacyRuler"><hr class="legacyRuler"><hr class="invisible minimal-padding"><iframe width="100%" height="315" src="//www.youtube.com/embed/K9KR0l0flzg?list=PLFWRNoM3AOaOrpa2DPR9PNKWohoD_0KjF" frameborder="0" allowfullscreen></iframe></p><hr class="legacyRuler"><hr class="invisible minimal-padding"><p><I>Marea</i>: I dedicate one day a week--usually Sunday or Monday--to cooking lots of healthy, plant-based food to last me for the week. When I cook, I always make enough for leftovers. Slow cookers are wonderful tools for the busy people among us: With very little prep time, you can throw a bunch of veggies, lentils, and vegetable stock into it to cook overnight and have a yummy, healthy soup for the whole family. I also often bake a bunch of sweet potatoes for the week, which are excellent snacks.<hr class="legacyRuler"><hr class="legacyRuler"><hr class="invisible minimal-padding"> Just like Myra and Marea, you don’t have to be vegan to enjoy delicious veggie-only recipes!
