The Mushroom Council® Shares Top Five Recipes of 2022

LEE'S SUMMIT, MO - If The New York Times declared mushrooms the ingredient of the year, who am I to argue? The fungus among us is well deserving of the title, with its rich umami flavor and nutritional value. Recognizing these qualities, The Mushroom Council® released the top five recipes of the year that utilize mushrooms. If you’re ready to inspire shoppers and cross-merchandise across departments—we love when recipes reach out across aisles—then sit back and dig in.

In order to quantify this list, the council has been keeping track of visitors to its site, as they perused hundreds of recipes showcasing mushrooms’ flavor and versatility. Whatever the occasion, fans made mushrooms the star in their kitchens in 2022.

Celebrating mushrooms being declared the ingredient of the year by The New York Times, the Mushroom Council has released its top five recipes of 2022

According to a press release, these star recipes are as follows:

  • Easy Mushroom Soup - A quick and delicious recipe that can be made in under 30 minutes. The combination of Crimini and white button mushrooms adds earthy notes that work well with the rich broth
  • Pasta with Creamy Mushroom Sauce - Mushrooms are infused directly into the sauce. A mix of butter, onion, garlic, baby Bella mushrooms, and cream creates the perfect sauce to add to pappardelle pasta
  • Mushroom Meatloaf with Mushroom Gravy - A 25/75 mushroom-meat blend is the perfect consistency to elevate the classic meatloaf dish. Button mushrooms and your choice of protein are blended to create the meatloaf and baked for 45 minutes. Once baked, this delicious meatloaf is topped with savory Crimini mushroom gravy
  • Creamy Spinach, Mushroom, and Lasagna Soup - This unique lasagna soup is packed with Crimini mushrooms, vitamin C-rich tomatoes and spinach, and al dente lasagna noodles. A dollop of ricotta and a sprinkle of mozzarella are added for a delicious meal
  • Trumpet Mushroom "Scallops" with Brown Butter and Thyme - These vegetarian scallops are made from sliced Trumpet mushrooms. The mushroom “scallops” are browned and cooked until tender. A drizzle of nutty, caramelized brown butter and vibrant thyme send them over the top
